Turn cheese grits into the perfect bite-sized finger food

These crispy, cheesy bites are packed with rich bacon flavor and creamy grits, making them an irresistible snack. We use three exceptionally tasty Alabama made ingredients—McEwen and Sons Stone Ground Grits, DAK’S Original Red spice blend and Bill E’s Small Batch Bacon—when we make this recipe and the quality comes through in every bite. Ingredients
- 2 cups cooked McEwen and Sons Stone Ground Grits
- 1 cup shredded sharp cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 6 slices Bill E’s Small Batch Bacon, cooked and crumbled (4 slices for the grits mixture and two slices for topping)
- 1/4 cup green onions, finely chopped
- 2 eggs, beaten
- 1/4 cup heavy cream
- 1 teaspoon DAK’S Original Red spice blend
- 1/2 cup panko breadcrumbs (for extra crispiness)
- Cooking spray or butter (for greasing the muffin tin)
Directions
Step 1: Preheat oven to 375°F and grease a mini muffin tin with cooking spray or butter.
Step 2: In a large bowl, mix the cooked grits, cheddar cheese, Monterey Jack cheese, bacon, and green onions.
Step 3: Stir in the beaten eggs, heavy cream, and DAK’S Original Red until well combined. Feel free to add more DAK’S for your individual taste preference.
Step 4: Spoon the mixture into the mini muffin tin, filling each cup about 3/4 full. Sprinkle a little panko breadcrumbs on top of each bite for added crunch.
Step 5: Bake for 15-20 minutes, or until the bites are golden brown and slightly crispy on the edges. Allow to cool for a few minutes before removing from the muffin tin, then top with remaining crumbled bacon.
