To balance the spiciness of the sausage and the kick from the Rotel, this recipe uses Jim N Nicks Bar-B-Q Cheese Biscuit Mix instead of Bisquick™ Original Pancake & Baking Mix. It adds the perfect touch of sweetness to go along with the cream cheese and sharp cheddar cheese. Ingredients
- 1 pound Monroe Sausage Scott Hot Link Sausage*
- 1/2 pound breakfast sausage
- 8 oz block cream cheese, softened
- 2 cups sharp cheddar cheese, hand grated for best results
- 8.5 oz package Jim N Nicks Bar-B-Q Cheese Biscuit Mix
- 10 oz RO-TEL Hot Diced Tomatoes with Habaneros, drained*
Directions
Step 1: Remove Monroe Sausage from its casing by making a single cut along the length of the sausage and peeling away the casing. In a food processor, add Monroe Sausage and breakfast sausage and process until well combined. If this step is skipped, the sausage balls may fall apart.
Step 2: Transfer meat mixture to a large bowl and add cream cheese, biscuit mix, and drained Rotel. Combine well. Form in 1.5” balls and place on a baking sheet lined with parchment paper.
Step 3: Bake at 375 for 20-25 minutes and golden brown (or until they reach an internal temperature of 165°).
*For sausage balls that are less spicy, use Monroe Sausage Original Link Sausage and RO-TEL Original Diced Tomatoes and Green Chilies.
